Blueberry Muffins

Honestly, I am not a blueberry muffin fan. But, I got this recipe from a friend in California and they are delicious! Give them a try and you will like them, too! I promise!

Rinse and drain 1 cup fresh or frozen blueberries. If using frozen, do not thaw!

1 1/2 flour

2 tsp. baking powder

1/4 c Wheat Germ

3/4 c sugar

1/4 tsp. salt

Mix together dry ingredients

1 egg

1/2 c milk

1/3 c oil

grated rind of 1 lemon

Beat egg. Add oil then milk and lemon rind. Mix into dry ingredients until moistened. Gently fold in blueberries. Spoon into greased or paper-lined muffin tin. Sprinkle with regular or course sugar. Bake at 375 degrees until golden, about 20 minutes.
