Honey Lime Enchiladas


I have seen this recipe on a few blogs and the name of it always kinda threw me off. Honey? Lime? Enchiladas? I love enchiladas. I would have to say they are my most favorite food! So, I had to give them a try, and... they were very good! I was amazed! So give them a try and let me know what you think! You will be amazed too!



Honey Lime Enchiladas from The Sister's Cafe


1.5 pounds of chicken or pork, cooked and shredded


Sauce:

1/3 c honey

1/4 c lime juice

1 TBSP chili powder

1/2 tsp garlic powder


Mix sauce ing. and put in the shredded meat. Let sit for at least 30 minutes.



You also need:

2, 10oz can of green enchilada sauce

equal parts mixed together of shredded cheddar cheese and shredded mozzarella cheese

flour tortillas



Lightly spray you dishes ( this will make one large pan or one 9x13 and 1 9x9 pan). Pour enough of enchilada sauce to cover the bottom of your dish. Add some cheese to the meat mixture. Place meat in tortillas and roll and place in dish. When finished, pour remainder of enchilada sauce over the top and sprinkle with lots of cheese!



Bake in a 350 degree oven, uncovered, for 30 minutes. Then, turn on the broiler and let the cheese brown. Then, enjoy!!!

do you think I could use lemon in place of lime?

hmmm, I don't know! The lime and the honey work really well together. I think lemon might make these a little too sweet and tart. They have a very interesting comb of sweet and savory. It wouldn't hurt to try! Let me know if you do and how it turns out!
